Ingredients :

tsp paprika powder
tsp garlic powder (sub with onion powder)
1.5 tsp onion powder (substitute with garlic powder)
1 tsp cayenne pepper (omit for not spicy)
1.5 tsp dried thyme
1.5 tsp dried oregano
1.5 tsp salt
0.5 tsp black pepper
– 2.5kg / 4 – 5lb pork ribs (2 racks)
3/4 cup sweet alcoholic apple cider (hard cider) or apple juice (Note 2)
1 tbsp olive oil
1/2 cup apple cider vinegar (Note 3)
1 1/2 cups tomato ketchup (or Aussie tomato sauce)
1/2 cup water (or use remaining apple cider!)
1 1/2 tbsp molasses, original (not blackstrap, Note 4)
1/3 cup brown sugar
tsp mustard powder
1 1/2 tsp garlic powder
tsp Worcestershire sauce
1 tsp salt
1 tsp black pepper
1 tsp Tabasco or cayenne pepper (optional, for spiciness)

Instructions : 

1 Smother both sides of the ribs with a mixture of the Rub’s components (most on the meaty side). Allow marinating for 20 minutes before serving (or overnight).
2 Set the oven temperature to 160 degrees Celsius (320 degrees Fahrenheit).
3 Arrange ribs in a single layer on a tray. Cover the ribs with apple cider, then bake them for 1 hour and 30 minutes or until the flesh is very soft.
4 Take out of the oven and crank the heat to 180 degrees Celsius (350 degrees Fahrenheit). After 15 minutes:
5 Take the ribs out of the range.
6 Sprinkle them with olive oil.
7 Reapply the foil to make a lovely crust on the Rub.
8 You’ll thank me later if you use to foil and baking paper to line a fresh baking sheet.
9 Take ribs out of the oven, and place them on a baking sheet covered with foil. Spread the ribs with the tray’s juices.
10 Invert the ribs, so the meatier side is down. Apply BBQ sauce and bake for 10 minutes.
11 Take ribs out of the oven and flip them over, meaty side facing up. Spread over the BBQ sauce and bake for 5 minutes. Two or three additional cycles may be necessary to achieve a sufficiently thick glaze for the ribs.
12 Serve with the leftover barbecue sauce and ribs cut into individual or several servings.
13 Grilling Sauce
14 Mix everything in a pot and cook over low heat, stirring regularly, for 45 minutes or until thickened.
15 Add Brown sugar/honey for sweetness, salt, and vinegar for salt and sour. Try it as a serving sauce or to glaze your ribs.
