1/4 cup olive oil — divided
lamb loin chops
1 tsp salt
1/4 tsp black pepper
1 tsp garlic powder — or fresh minced garlic
1/2 tsp thyme — optional


1 After 20 minutes at room temperature, the lamb chops will be ready to serve.
2 Set oven temperature to 400 degrees Fahrenheit.
3 Rub the lamb chops with the olive oil, then season with salt, black pepper (if using), garlic powder, and thyme on both sides.
4 Olive oil, 1 tablespoon, heated in a heavy-bottomed ovenproof pan.
5 Toss in the chops and cook on each side for two to three minutes.
6 Put it in the oven and let it cook for at least 10 minutes if you want it rare, 15 minutes if you like it medium, and 20-22 minutes if you like it well done.
7 Take the chops out of the oven and let them sit in the pan for 5 minutes before serving.
