Vegetable Rice

Total Time: 25 Minutes Prep Time: 15 Minutes Cook Time: 10 Minutes Yield: 8 servings
Ingredients :
1 tablespoon olive oil
½ cup green beans, cut into 1-inch pieces
1 cup sliced carrots ½ cup peas
1 tablespoon grated ginger
2 teaspoons garlic paste ½ cup chopped eggplant
2 tablespoons chopped cilantro
3 cups cooked rice ½ sweet onion, chopped
Instructions :
Heat the oil in the pan over medium heat.
Fry the ginger, onion, and garlic for about 3 minutes or until softened.
Add in the peas, eggplant, carrot, and green beans and fry for 3 Minutes.
Add the cilantro and rice.
Stir-fry constantly, for about 10 minutes or until the rice is heated.
Serve immediately.
