Ingredients : 

pork tenderloins, about 1 pound each
tablespoons brown sugar
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon Italian seasoning
1 teaspoon salt
1/4 teaspoon pepper or to taste
1/4 cup butter cut into pats
Chopped parsley optional, as needed


1 Turn the oven temperature to 400 degrees and put a rack in the center.
2 Trim the tenderloins of any extra fat and remove the silver skin (the tough part that may cover some of each tenderloin). Make sure the tenderloins are completely dry by patting them with a paper towel.
3 Put the ingredients for the rub into a small bowl and mix them all. You’ll need brown sugar, smoked paprika, garlic powder, onion powder, chili powder, Italian seasoning, salt, and pepper. Apply the spice rub liberally to the tenderloins.
4 Put the pork tenderloins and the butter pats into a 9×13 baking dish or something comparable.
5 Leave the oven door ajar and bake for another 25 minutes until the internal temperature of the pork reaches 145 degrees. Rest for 5-10 minutes to keep the meat moist before slicing it into medallions.
6 If you prefer, sprinkle some chopped parsley on top of the pork and drizzle some pan juices over it.
